They have uber amounts of chocolatey goodness.

They are rich and dense and have a delightful cake texture.
They have coffee. HELLO!!!
They have SPRINKLES.
And, well, if that's not a good enough testimonial to their awesomeness, just look at the amount of CAPS LOCKS that I've used so far... these doughnuts WAKE YOU UP!
(Err, or maybe that's because I'm on my second coffee... details, details.)
P.S. they're vegan, too!!!
Chocolate Olive Oil Doughnuts - What you need:
- 1 1/2 cup all purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 flax egg (1 tablespoon flax meal whisked together with 3 tablespoons of water) or 1 egg
- 1/4 cup apple sauce
- 1/4 cup maple syrup*
- 1/4 cup olive oil
- 1/4 cup freshly brewed coffee
+ 50 grams dark chocolate for doughnut dipping (totally optional, but definitely recommended... maybe some sprinkles, too?!)
* Since these are a morning breakfast treat for me, not really a dessert, I kept the sugar to a somewhat reasonable level. They were perfect for my tastes, but definitely not sweet. If you want a touch more sweetness in your life, add another tablespoon or two of maple syrup to your doughnut batter.
Chocolate Olive Oil Doughnuts - What you do:
Preheat your oven to 180 degrees celsius (350F).
Prep your flax egg by mixing together the flax meal and the water. Allow this mixture to sit and thicken while you prepare the rest of the batter.
In a medium bowl, stir together the flour, cocoa powder, baking powder, salt, and cinnamon. Set aside.
In a large bowl, whisk together the flax egg (or normal egg, if you're not doing a vegan version) and apple sauce. Stir in the maple syrup and olive oil. Blend well. Finally, add in the coffee. Stir until everything is combined.
Add the dry mixture to the wet mixture. Stir until everything is just combined. The mixture will be super thick, but this is totally ok.
Brush olive oil onto your doughnut pan. If you don't have a doughnut pan, no worries - make some chocolate muffins!
Using a small spoon, fill the doughnut pans. Smooth out the doughnuts with the back of the spoon.
Bake at 180C for 14-16 minutes. An inserted toothpick should come out clean from the doughnuts.
Allow the doughnuts to cool. While they're cooling, you can optionally heat 50 grams of dark chocolate over a double boiler for some dipping action!
After the chocolate has melted over the double boiler, dip the doughnuts into the chocolate. Add some sprinkles, if you choose! (A very wise choice, in my opinion!!) Other fun options could include crushed nuts or almond slivers.
Sprinkles are even better when they come out of a unicorn sprinkle shaker!
Allow the chocolate to cool and harden slightly.
