I went to Zadar, Croatia last week.
It was pretty fly.
I mean, it rained the entire time. Except for our last 4 hours. But you better believe I spent those 4 hours 7/8ths of the way clothed next to the sea. Thankfully I'm Canadian and don't believe in cold preventing the absorption of sunshine. Survival of the fittest. POW!
The remaining hours were spent eating pizza and gelato and drinking Croatian wine and Maraschino. Oh. There was also some copious snacking of all things Pag cheese. Throughout this process I'm pretty sure the Swede and I sent about 50000000 snapchats of ourselves doing weird things. That's what friends are for.
Upon returning I ended up postponing any sort of pizza/cheese cleanse for another day, and dined on veggie burgers at a local hangout that makes prettttty delightful falafel burgers. It was sunny. I was in great company. And there was an Arnold Palmer. Kind of a perfect afternoon.
An Arnold Palmer is a (non-alcoholic... whhhhaaat?) drink composed of equal halves of tea and lemonade. Despite my initial thoughts that Mr. Palmer was a judge, he was actually a golfer who had, apparently, really specific tastes in beverages.
The original AP is made up of iced tea... which typically gives me the heebie jeebies when prepared in the southern US, so I switched it to rooibos tea - cause it begs to be paired with lemons, and made a healthy(ier) homemade lemonade!
Rooibois Arnold Palmer - What you need:
- 1/2 cup lemon juice
- 1/2 cup raw honey OR agave syrup (for a vegan version)
- 3 cups water
- 3 cups brewed rooibos tea (I used 2 teabags for the 3 cups and I allowed them to hang out for about 5 minutes for a strong rooibos tea), chilled.
Rooibos Arnold Palmer - What you do:
I kinda winged the lemonade, but I think it turned out pretty well.
To make the lemonade, pulse, and then blend, the honey OR agave and lemon juice together in a food processor. You can also heat the lemon juice + water + honey up on the stove top to have the honey absorbed, but I tried to minimize the heat used in this recipe.
After the honey/agave is blended with the lemon juice, add the water and combine.
(Stop here if you're only looking for lemonade! You will probably want to add 2-3 cups of water to this lemonade - I am thinking big picture with the added in (unsweetened) rooibos tea at the end!)
Pour the lemonade into a big old pitcher and top off with the chilled rooibos tea. Stir well and chill the AP before serving.
Serve (optionally) over ice and top with a mint leaf for some colourful and edible decoration!
If you're not a fan of rooibos (SHAME ON YOU!), this Arnold Palmer drink would be delightful with mint or green tea as well!!!

PS: Croatian figs are fantastic.
So I'd recommend to enjoy this AP on a SUNNY day... but even with clouds, it's an incredibly awesome drink.
