My sister is using me. She's having a little party at her office, and is serving mini sliders.
She asked me to make mini burger buns for said sliders, and told me I could "even make them vegan". If she permits me to do something like this, I can tell she really wants something.
Since it's been a busy week(s), I opted for a simple burger bun recipe. I wasn't planning to make these gluten free, but I didn't realize I was out of flour until I had already left the yeast to set. I improvised with various gluten free flours and it turned out just fine!
I expect she'll be using her buns to soak up various burger juices... but I stuck a veggie lentil burger in the middle of my bun!
I'm really happy she asked me to make these buns, because they turned out so well, they were incredibly simple, and I know that I'll be making this recipe again!
Mini vegan + gluten free burger buns - What you need:
- 2 packets active dry yeast (10 grams in total)
- 1 cup plus 2 tablespoons warm water
- 1/3 cup olive oil
- 2 tablespoons sugar
- 1 flax egg (1 tablespoon flax meal mixed with 3 tablespoons of water)
- 1 teaspoon salt
- 1 1/2 cup chickpea flour
- 1 1/2 cup quinoa flour
- 1/2 cup cornmeal
- 3 teaspoons xanthan gum
+ additional flour for kneading (approximately 1/2 cup)
Mini vegan burger buns - What you do:
Prepare your flax egg and set aside to thicken slightly.
In a large bowl, stir the yeast and water together until the yeast is dissolved. Stir in the sugar and oil. Allow this to sit for 5 minutes.
The mixture expands and becomes all bubbly and ready for preparation! If this doesn't happen - you may have old / dead yeast. I'd recommend trying new yeast packets!
Add in the flax egg, salt, xanthan gum, and flour. Stir until the dough comes together in a ball.
Turn out the dough onto a floured surface and knead for 5 minutes. The dough should be smooth and elastic-like. I used about another 1/2 cup of chickpea flour during the kneading process.
Immediately separate into 18 pieces and shape each piece into a small ball. If you want to make normal sized burger buns, try 10 - 12 pieces here.
On a parchment paper-lined baking sheet, evenly space the buns apart (give them about 4 centimeters of space).
Cover with a towel, and allow the buns to sit for 10 - 15 minutes. In the meantime, pre-heat your oven to 220 celsius (425 F). Bake in a pre-heated oven for 10 minutes, the buns should turn golden brown.
Allow the buns to cool.
This makes 18 mini burger buns.
