IT'S MY BIRTHDAY!!!
I woke up this morning, did my weird morning ritual, and decided that, it would, in fact, be more fun to make pancakes than to do my hourly reading of the Economist.
And more fun it was! (Despite my unwavering love for this lovely magazine.)
There was a torrential storm this morning... which in a way was a good thing... for many reasons:
1. Paris was like a sauna of hell and death last night - the rain broke the heat!
2. I can't run, and any beautiful running weather makes me sad. (No, I'm not bitter, thank you very much.)
3. Umm, an excuse to stay in all morning and make/EAT pancakes!
After a rough 2 weeks, I'm finally starting to simmer in some positive vibes.
Last night was a perfect start off to the birthday celebrations: MARGARITA cake, wine, and more margaritas (in the drinkable form) with my three lovely gal pals! It may be the last time us three are together for a long time - so this was extra awesome. Then some walking (read: hobbling, they were so patient!) around Paris, until we finally ended up in some dive bar in Montmartre to cap off the night with a final drink.
Then, my sister gifted me the complete swimming set (one-piece suit, goggles, and swim cap!) so I can do something fun and sporty while I wait for my foot to heal. It was so wonderful because she knew how bummed I was about the whole running deal. She also got me some rad hiking equipment for my upcoming trip!
On top of all this loving, I received the most heart-felt and kind letter from an old friend that I haven't spoken to in ages! The words were exactly what I needed to hear, and I received them at exactly the right time!
Really - it couldn't have been better! <3
Well, until pancakes came along...
Vegan-ized from Martha Stewart
These pancakes contain one of my favourite ingredients: CASHEW MILK! However, you can make them with normal milk, or try them out with any of your favourite non-dairy milks.
Cashew milk pancakes - what you need:
- 1 cup cashew milk
- 1/4 cup apple sauce
- 2 tablespoons oil (or melted butter/vegan margarine) [+ more for cooking the pancakes]
- 1 cup all purpose flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
Cashew milk pancakes - what you do:
Stir together the milk, apple sauce, and oil. Add in the flour, baking powder, sugar, and salt. Combine the ingredients until well incorporated, but don't over beat - it's ok if there are some lumps.
Set aside while you heat up a frying pan or griddle. Add enough cooking oil to cover the pan and scoop out approximately 1/4 cup of the pancake batter in a circle onto the pan.
Cook the pancake until the edges start to turn golden brown (3 - 4 minutes). Flip the pancake over and cook for another 3 - 4 minutes. Both sides should be golden brown.
Repeat the process until all the pancakes are cooked up! This made 8 pancakes for me.
Ok, now, despite what your mom told you, there really is only ONE proper way to eat a pancake.
It sounds weird, I know, but please, try it before shutting me down!
Normally I use peanut butter, but I only had almond butter at my apartment... the substitution was quite alright.
So, you smear a little bit of peanut (or almond) butter on the pancake. Top it with some maple syrup. ... and guys, this better be REAL Canadian (Vermont is ok too - I won't judge you too badly) maple syrup. If it isn't... just... stop. now. Then, the necessary part of the whole equation: sea salt. A finish pinch of sea salt goes on top of the whole concoction. I added sprinkles. It's my birthday... I do what I want.
I promise. This is really, truly unbelievable. Your mind will be blown.

Pick up a pancake and eat it h.o.w.e.v.e.r. you please!
