I've been in the happiest holiday mode of my life.
I fled Paris for a week escapade in Aix-en-Provence. (If you ever come to France, you MUST visit this city - I'm totally in love and I'm already planning on packing up my bags and heading there for the rest of my life. PS: Photos at the end of the post!)
I had an unbelievable time hiking, wine tasting in the countryside, and shopping in the local markets for fresh fruits (OMG THE MELONS !!!), cheeses, olives, lupinade (a hummus/pesto vibe made from lupin seeds), and baguettes. Plus, I had the most fantastic host possible. I could have stayed forever, but I had my yearly Asian invasion planned, so off to Singapore I went! (For 5 whopping weeks!)
The other day, I went and had an extended Sunday lunch with my Pops. After we went into the most amazing bookstore ever for some digestive browsing and, at the end, a coffee. On the menu they had an avocado coffee. I have NEVER heard of this before, so I looked up some recipes, and after some trial and error, I present to you the most incredible avocado smoothie coffee thing ever.
Avocado Coffee Shake - What you need:
- 1 medium ripe avocado
- 1/2 cup strong brewed coffee
- 1 cup almond or coconut milk
- 1/4 cup maple syrup, honey, or agave syrup, optional*
- Ice cubes for serving, optional - but this drink should be served cold!
*I am NOT a sweet coffee person (oddly enough!), so I did not add the sweetener to my drink to begin with. If you are looking for a more milkshake/frappuccino vibe, I recommend adding something to sweeten up this drink. You can even toss in a few teaspoons of sugar directly to your hot coffee before adding it into the blender. You can always add more sugar/sweetness at the end of this process, but you can't take it out!! In the end, I added 2 tablespoons of maple syrup to the recipe (1 tablespoon per serving). It was just right for me!
Avocado Coffee - What you do:
Place the avocado, coffee, milk, and sweetener of your choice in a blender. Blend until smooth and creamy.
Adjust sweetness if needed.
Serve over ice or serve chilled. This makes 2 shakes.
Now holiday mode is over (kind of?) and working starts - but with this coffee, I think I'll have enough energy to finish my PhD by the end of the summer!
