So like errbody in the baking world is all posting these fancy Valentine's Day dessert recipes. I think it's really wonderful. I like chocolate. I like candy. I like heart shaped everything and anything. And I totally LOVE gifts (ahem, hint hint).
But. This year the entire idea of Valentine's Day is really sketching me out.
Boys are really nice and wonderful, but right now I'm kinda all about my friends. I used to keep a diary during my bachelor university years and I found it while cleaning out a closet over the holidays (he he he, it's so funny). It was interesting because it was ALL ABOUT BOYS. I had written nothing about my friends! And now looking through my life I'm realizing that my friends are just so awesome. ONE DAY I will find a guy that's tall(er than me), handsome, smart, funny, likes dogs, and is totally down with me baking to Kendrick Lamar at full blast instead of doing everythingelse that I'm supposed to be doing with my life. But, until then, I know that my friends will love me. Even if half my conversations revolve around Drake and/or chocolate. ((Umm. I went on a date the other week... dude didn't know who Drake was... that was over before it began... we had nothing in common after this.))
And, well, long story short: GIRLS NIGHT THIS WEEKEND. I'm super stoked to be surrounded by all these wonderful ladies. And now we have flower macarons.
They're somewhat Valentine's Day-like... so yeah, if you're one of those people in love, make them for your significant other. And if not... grab a bottle of wine and watch your favourite rom-com with your best gal pal. ... Unless she's in a relationship... then just take that wine and a plate of these macarons to your nearest couch. No shame.
But!!! That's okay, because sometimes mixing and matching makes awesome things... like these macarons.

After you've prepared your macaron batter for both the orange and the pistachio macarons...
... spoon each batch into it's own pastry bag.
It depends on what you like - but I chose the pistachio as the center of the flower, and the orange as its petals.
Pipe out a pistachio circle onto a baking sheet lined with parchment paper. Next, pipe out 5 orange circles around the pistachio circle to create a flower shape.
The colours aren't too strong... but if you're a BAKECETERA follower you should know by now how I feel about food colouring.
Feel free to add your own food colouring to make the flower stand out more.
After you've piped out all your flowers, you may have extra of one macaron batter. I had a lot left over from the pistachio batch since I was only using it as the center of the flower, so I made some pistachio macarons!
When all your batter is piped out as macarons, tap your baking sheet on the countertop a few times to remove any air bubbles.
Leave the macarons out to rest at room temperature for 1 hour.
After 45 minutes, preheat your oven to 140 degrees celsius (285F).
The baking time totally depends on the size of your macarons. My flowers were pretty big, so I left them in the oven for about 20 minutes (rotating the tray half way through the baking time). If the macaron sticks to the parchment paper when you try to pop them off, but them back in the oven for another few minutes. For my "normal" sized macarons, the time was 15 minutes.
Allow the macarons to cool completely on a cooling rack.
While the macarons are cooling, whip up some filling!
I paired them with a mascarpone, orange jam, and honey filling.
What you need:
- 225 grams of mascarpone cheese, at room temperature
- 2 tablespoons of orange jam
- 2 tablespoons of honey
I used "bitter orange" orange jam, so I needed the extra sweetness of honey. If you're using a sweeter jam, first add only 1 tablespoon of honey... add more if needed.
What you do:
Whisk the mascarpone, orange jam, and honey together until completely blended.
Spoon into a piping bag. On one macaron shell, pipe out a dollop of filling. Use an unfilled macaron shell to top off and to create the full cookie.
Repeat until all the flowers and/or macarons are filled!!
